I found a recipe for some home made Gummy Worms!!!!!!! They look like a pretty guilt free treat as far a treats go!!!!!! Of course nothing is as good as the REAL thing - but hey - it's worth a shot!!!! :O)

A new recipe

My Taste of Home just came yesterday and I found this recipe. I don't think it is very nutritious, but quite possible it could be a very indulgent dessert that you wouldn't have to look at for the next few months anyways. Keep in mind, I haven't tryed it.

Grasshopper Pie

1 1/2 cups cold skim milk
1 (3.9 oz) package instant chocolate pudding mix (Get the sugar free equivalant)
2 3/4 cups fat free cool whip
1 (4.67 oz) package andies mints(chopped)
1 chocolate crumb crust
1/4 tsp mint extract
2 drops green food coloring

Whisk milk and pudding mix together for 2 minutes. Let stand for 2 minutes until soft set. Fold in 3/4 cup cool whip and 3/4 cup candies. Spoon into crust. In another bowl combine remaining cool whip with extract and food coloring. Spread over pudding layer, sprinkle with remaining candies. Cover and refrigerate for 4 hours or until set.

I put the ingredients into caloriecount.about.com that Razzle told us about, and if you split the pie into 8 servings each serving has about 230 calories, but that is with regular pudding and just chocolate, not the mints, because the website couldn't understand what I was trying to tell it so I got it as close as I could. Also you could make this better yet by ditching the crust and making parfaits. Then each serving would only have 89 calories (according to the web site, I can't believe that crumb crust is that bad for you!!, and that is still with the regular pudding, not the fat free sugar free kind). I thought it sounded delicious and am probably going to make it for the superbowl party, so that I have something that isn't quite as calorie laden to enjoy!!!

Yum Yum Yummy and so healthy!!!

Winter Minestrone Soup (my way)

1T Oil
4 Green onions chopped
1/2 Red Onion
2 Celery Stalks Chopped
4 Carrots Cut
6oz Deli Ham Chopped
4 cups water
4 cups Chicken Broth
4 bay leaves
1 1/2 tsp Basil
1/2 tsp salt
Pepper to taste
1 cup Wheat Berries Rinced
1 T Parmesan Cheese
2 14oz Can Diced Tomatoes
1 can Garbanzo Beans
1 can Green Beans
1 bag Spinach rinced with the stems broken off

Saute Onions Celery and Ham in oil till onions are clear. Add water, chicken broth, bay leaves,basil, salt, pepper, parmesan, and wheat berries. Cook on low for 2-3 hours. About 45 min before ready to serve add tomatoes and beans and heat through. As you are serving put the spinach in and stir it in.

The spinich warms up and it is so very yummy!!! And for all you pointers it is 4 points for 2 cups of soup. It has 6 grams of fiber and not much fat and it is yummy enough my kids even gobbled it up.

I hope everyone is doing better than I am this week. I seriously need some help this week. I just can't get motivated. If anyone has any good ideas please let me know.

CITRUS SENSATION

I get low cal recipes from Kraft Food and Family. This one sounded great. However anything orange sounds good to me. I think I will try it. It only has 30 calories and no fat.

Citrus Sensation

3/4 cup boiling water
1 pkg (4 serving size) Jell-o Orange Flavor Sugar Free Gelatin
ice cubes
1/2 cup cold water
1/2 cup orange sherbet, softened.

Stir boiling water into gelatin, until completely disolved. Add enough ice cubes to cold water to measure 1-1/4 cups. Add to gelatin, stir until ice is completely melted.

Add sherbet; stir with wire whisk until well blended. Spoon evenly into 6 individual dessert dishes or into medium serving bowl.

Refrigerate 1 hour or until firm.


I think I will try this one. It sounds right up my TREAT ally

Chili's Salsa Recipe

I love the salsa they give you at Chili's - soooooooo I went to copykat.com (great website) and found it. SOOOOOOO yummy!!!!

Recipe Makes 4 Cups

1 (14 1/2 oz) can tomatoes and green chilies
1 (14 1/2 oz) can whole tomatoes (plus the juice)
4 teaspoons of jalapenos
1/4 cup yellow onion (diced)
3/4 teaspoon garlic salt
1/2 teaspoon cumin
1 teaspoon of sugar (can add more if you want)

1. In food processor place jalapenos and onions.
Process for just a few seconds
2. Add both cans of tomatoes, sugar, salt and cumin
Process until well blended but not pureed
* A couple hours of chilling will help blend and enrich the flavors*

Snack Snack Snack

Just thought I would share some of the wonderful snacks that I discovered when I was going to Weight Watchers. This is a habit that I really have a hard time breaking. So a usual snack has to become a healthy one. Sugar free Jello is WONDERFUL. No calories. If you like fruit in it that is great but my favorite way is with Cool Whip Free. Also no calories. It is like sinning it tastes so good. You do have to use the brand name fat free COOL WHIP. The others are not so good. Fat Free Jello pudding is also wonderful. I even got away with feeding this to my 90 year old father and he never new the difference. Pretzels are great. If they need to be dipped in mustard (which I don't but other members of my family do) it is great. The lays chips are one of my favorite, more like real chips than baked but baked are great too. Chips and salsa becomes really healthy if you use the low calorie chips. I also found that if I had vegetables or fruit already cut up in the fridge I was more apt to eat it than if I had to stop and fix it. Snacking should be fast and wonderful, not complicated. And every once in awhile Chocolate just had to be there. I found that if I really craved something, one bite (or a small portion) would stop the craving and the increased calories would have been used in other ways as I tried to find something to take the place of chocolate. (NOTHING takes the place of chocolate, beleive me I tried)

Menu Ideas?

So Rex Kwan Do invited some friends over tomorrow night for a barbecue and football game. I am in need of some healthy side dishes. I know myself too well to think that I can have a fatty potato salad and chips and not eat enough to feed the neighborhood. SO - I am thinking if I can have lots of healthy side dishes I will be able to enjoy the bbq and not hate myself in the morning. Any ideas???

A nice filling snack

So, my dinner wasn't much to get really excited about like Darla and Alfalfa, but I had a snack tonight that was really yummy (at least to me) I popped a bowl of airpopped popcorn, sprayed it with some I can't believe it's not butter spray, and sprinkled it with some Kernel Seasoning (you can get it in lots of flavors, but tonight it was parmesean and garlic....I bet my breath smells great..he he he) Anyways, it felt like a splurge, but truly I didn't consume all that many calories at all!! Wonderful!

our fabulous dinner

Just thought we would share our fabulous very filling dinner with everyone. I am always in need of some good dinner ideas so if anyone else has some please let me know. I made that fabulous chicken that Thunderbuns put on here. Thank you so much it was FABULOUS and the kids snarfed it up. I love dinners like that. Then we had broccoli and sugar free Jello. Then I had made home made whole wheat bread. Fabulous dinner for not very many points. We both decided we had been so good today we deserved a treat tonight. Granted I did go spend a small fortune at the grocery store to stock our house with healthy snacks and food since we still have so much Christmas crap around here but it helps so much to have a healthy choice for a snack and an easy way to make a healthy dinner. Thanks for all the fun ideas and please keep them coming I would love to hear every day meals that everyone is doing. Like today we had sandwiches for lunch on 1 point bread with a little mayo and mustard with a few pieces of ham and a tomato. With baked chips and a pickle. Then breakfast was of course a great bowl of heart healthy Cheerios's. No snacks today but the bouncing on the ball trick is working my hips totally feel like they have had a workout today :) I hope everyone else is doing great too!!!

1st day

I hope everyone had a good 1st day. I know it is only one day but I hope everyone got a good start. I thought I would share my favorite treat. Baked tostito's and salsa. FABULOUS!! It hits that salty and sweet snack that if you are like me you always need :) and if you are pointing you can eat 30 chips for 4 points. Trust me that is a huge snack. I use to eat it for lunch. Just add a little cheese and you have yourself a 6 point lunch :) And if you cut up celery you can dip it in the salsa too and it is 0 points and it is way good.

Yummy Ranch Chicken

I asked "Cookie" :O) if it would be ok if we posted healthy some healthy recipes. She gave it a go......... so here is a really good recipe for chicken that I made up. My kids absolutely loved it!! I love new recipes so I'd love to hear some of your favorites!

12 - 14 boneless skinless chicken tenderloins thawed
(you could use boneless skinless chicken breasts also - just adjust it how you want)
In a ziploc bag combine 1/2 cup wheat flour and one Hidden Valley Ranch Salad Dressing Mix Packet
Coat your chicken in the flour mixture - just like you would shake and bake
Spray the bottom of a 9x13 pan and lay out chicken
Sprinkle left over flour mixture on top of chicken
Spray a little "I can't Believe It's Not Butter" Spray on top
Bake at 425 for 25 - 30 minutes

3 Coated Chicken Tenderloins = 220 Calories
