So Rex Kwan Do invited some friends over tomorrow night for a barbecue and football game. I am in need of some healthy side dishes. I know myself too well to think that I can have a fatty potato salad and chips and not eat enough to feed the neighborhood. SO - I am thinking if I can have lots of healthy side dishes I will be able to enjoy the bbq and not hate myself in the morning. Any ideas???

I have some great ones. Get a veggie tray and some of that Hidden Valley Ranch dip that you mix in sour cream, only buy the fat free sour cream instead of regular. Also I have a great simple fruit salad recipe.
1 (20 oz) can pineapple chunks
1 (11 oz) can manderin oranges
1 banana, sliced
1 kiwi, halved and sliced
1 cup cut strawberries
1/4 tsp grated lime peel
2 Tbsp fresh lime juice
1 Tbsp honey
Drain pineapple reserving 1/4 cup juice. Combine fruit in large bowl. In small bowl mix together pineapple juice and all remaining ingredients. Toss over fruit.
Makes 8 servings

I don't know about strawberries this time of year, but I am sure any fruit would work fine.
Also, if you really want chips you can by the Lays light and they are really suprisingly good and not very calorie laden (but they are a little expensive so keep them to yourself!!)

The baked lays are great too and you won't get the runs if you eat to many :) I love fresh vegie trays with fat free ranch dip. But pull out your salsa and celery. People might think you are crazy but yum yum yum!! You could make a pasta salad with whole wheat pasta and fat free italian with vegies in it I think that sounds fabulous too. Good luck if it wasn't so warm there you wouldn't have to be worrying about the bbq. You would be trapped inside like the rest of us :)
Good luck. Hosting a party is hard. But when it is at your house it is easier than going to someone elses because you can be sure that there is something there that you can eat. Try substituting pasta salad instead of potato. Use whole wheat pasta(which was a real easy trade off for me) and fill it with wonderful fresh vegetables. Low fat Italian dressing and voila you have a wonderful low cal pasta salad. You really can eat a healthy portion and still be calorie okay.

I found a fun treat/side for fresh fruit salsa. I know real salsa would do the trick, but it might be a fun desert.
2c strawberries
1c peaches
3 kiwi fruit
1 4oz can mandarin oranges
2 bananas
1 tsp. lemon juice
1/4 cup sugar
1/3 c frozen orange juice concentrate
Finely dice all fruit, combine all ingredients together. Allow to sit 30 minutes to let the flavors blend. Stir well and serve with cinnamon chips.(tortillas sprayed with butter, sprinkled with cinnamon sugar and broiled for 5 minutes) I am sure any fruit would work. Have fun at the party. Good Luck!!!
