A yummy new recipe

So, I don't have any nutritional info on this recipe, but it seemed healthy, so forgive me if I am wrong. But it was yummy. So yummy the leftovers lasted about 3.2 seconds in my house, so I am sharing.

Chicken Lo Mein

1/2 lb angel hair pasta
3 Tbsp Hoisin sauce (I found this in the oriental section of the store, it cost me about a dollar)
1/4 cup chicken broth
2 Tbsp soy sauce
2 tsp sesame seed oil
1 tsp corn starch
2 Tbsp canola oil
1 Tbsp finely chopped fresh ginger*
1 medium onion halved lengthwise and thinly sliced
1 package mushrooms, sliced
1/2 cup thinly sliced carrots
1 cup broccoli florets
1 cup sugar snap pea pods, halved
1 (15 oz) can Chinese baby corn drained and cut into thirds
1 lb boneless skinless chicken breast cut into bitesize strips

Cook the noodles until just tender, drain and rinse with cold water, set aside. In a small bowl mix Hoisin sauce, chicken broth, soy sauce sesame oil, and cornstarch. Set aside. Heat 1 Tbsp of the oil in a large wok or skillet. Stir fry the ginger for 30 seconds, add the onion and cook for 2 more minutes. Add the mushrooms and carrots, cook for 2 more minutes. Finally add the broccoli, peas, and corn. Stir fry for 2 more minutes then transfer all to a plate, set aside. Heat remaining Tbsp oil in the wok. Stir fry chicken until no longer pink, about 3-4 minutes. Return everything to the wok. Toss until heated through, about 3 minutes. Serves 6-8

* I was talking on the phone while cooking this and grabbed garlic powder instead of ginger (because I opted not to buy fresh) I was so worried it was ruined, but I think I will make it with garlic from now on actually. There were no complaints. I used a tsp.

You also can use any veggie combo that you want for this. I did splurge and buy all of the veggies it called for and didn't regret it. The corn was also about a dollar, and I can buy a ginormous bag of sugar snap peas at Costco for 4 dollars and it was enough to make this and still have grundles left over. I just can't stand spending 3 dollars for a small pack at the grocery store when I know how cheap I can get them at Costco.

And if any of you are more nutrition smart than I am and you look at this recipe and it isn't actually good for you, please let me know, because I really really really want it to be healthy!!! MMMMMMM I may need to make it again this week. I still have some hoisin sauce leftover and I would HATE to let it go to waste...lol!

Looks very healthy to me. The only way I can see to make it better is to use whole wheat pasta. I think that I will try it!!!

I put it in to my calorie counter website. I put it as 5 servings so it would change if you had leftovers. It is 519 Calories, 17.1g fat, and 5.1 fiber which makes it 11 pts per serving for those of you who are pointing.

where did you get Hoison sauce for $1 it was $4 where I looked...
