Well yesterday afternoon I was contemplating dinner and decided to make one up. Nothing new I actually do this often but this one turned out really good. It really can't be too bad for you so I thought I would share and Razzle can figure out the points ;)
5 chicken breasts
2 pints salsa
1 can black beans
Put in crockpot and cook
When chicken is done take chicken out of salsa, bean, and chicken stock mixture and shred the chicken and then put it back into the mixture and keep warm
Mexican rice (brough family cookbook 2)
(which is rice made with tomato sauce and green chilli's and pepper and onions)
Then I got whole wheat tortillas and spread fat free refried beans on them sprinkled a litle bit of cheese and warmed that up in the micro
Then put some rice and the meat mixture on!!
YUMMY!!!!! We ate it with a big green salad and it was FABULOUS!!! And I really dont' think it could have been that bad ??? Could it??? And that recipe fed my whole family and there is enough we can do it for leftovers again next week :) Gotta love a meal like that :)

I could estimate the serving size if you want. You sd it fed your whole family + leftovers. It also depends on the type of refried beans, cheese, and tortillas that were used. here is the website again if you want to use the packages.
